When I type:

"My Music; Cookies; eMule; Incoming; Temp"

in the field of folder I would like to exclude, the program does not exclude these folders. What am I doing wrong?

Try removing space before folder names, like (no quotes):

My Music;Cookies;eMule;Incoming;Temp

Also, be sure you are using semicolon as a separator, not a comma.
